Mt. Girnar Reserve: Why Beej Started with Groundnut Oil

Beej Mt. Girnar Reserve groundnut oil

When you set out to build premium Indian kitchen ingredients, you have to start somewhere. We started with groundnut oil — and specifically with a single-origin oil from the foothills of Mt. Girnar. Here's why that was the right first product, and what "Reserve" actually means on the bottle.

Why oil first, and why groundnut

Oil is the one ingredient in an Indian kitchen that's used every single day, across almost every dish — yet it's usually bought as an anonymous commodity, on price. That gap is exactly where a better product can earn trust. And among oils, groundnut oil is the everyday workhorse of Indian cooking — mild, high-heat, versatile, and culturally rooted, especially in western India. If we could make the everyday oil genuinely better, we'd have earned a place in the kitchen. So oil became our trust wedge, and groundnut the natural starting point.

Why Mt. Girnar, Junagadh

Origin decides an oil before any press touches it. We built around a rare high-oleic groundnut variety grown around Mt. Girnar in Junagadh, Gujarat — a limited harvest, chosen for an exceptional fat profile. It's single-origin by principle: traceable to its region and variety, not blended into anonymity. (For the groundnut tradition of the region, see Best Oil for Gujarati and Maharashtrian Cooking.)

What "Reserve" means

Reserve isn't decoration — it's a standard:

  • Single-origin, rare high-oleic Girnar seed — the variety does the heavy lifting.
  • Vagai wood-pressed, single-pressed — low-temperature, gentle, pressed once.
  • Independently lab-tested — fatty-acid profile, purity and 250+ chemical residues, batch by batch.
  • 75%+ MUFA — a monounsaturated profile comparable to extra-virgin olive oil (most cold-pressed oils sit at 40–50%; refined at 30–35%). (What that means: High-MUFA, explained.)

The result is an oil people describe as light and clean — one that lets food taste like itself.
