Groundnut Oil Smoke Point: Tadka, Sabzi and Frying

A smoke point is simply the temperature at which an oil starts to break down, smoke and turn acrid. For groundnut oil it's high enough to make it a genuinely versatile Indian cooking oil. Here's what the number means in practice across the three things you actually do with it.

The numbers

Type Smoke point (approx.)
Refined groundnut oil ~232 °C
Filtered / wood-pressed groundnut oil ~210–230 °C (varies with refining and freshness)

(Sources: Wikipedia, ThermoWorks.) Either way, groundnut oil sits comfortably above the temperatures everyday Indian cooking reaches. A useful bonus: high-oleic groundnut oil is more heat-stable than ordinary oils, because monounsaturated fat stands up to heat better.

Tadka (~hot, brief)

Tempering wants hot oil — but not smoking oil. Heat groundnut oil until it just shimmers, add your cumin/mustard seeds, and let them splutter. Its high smoke point means you've got margin before it scorches, and its mildness lets the spice aroma lead. (More in Which Oil Is Best for Tadka?)

Sabzi (~medium)

Everyday sabzi rarely pushes an oil near its limit, so smoke point is a non-issue here — groundnut oil's value in sabzi is its neutrality, letting the masala and vegetables lead.

Deep-frying (~170–190 °C, sustained)

Frying is where smoke point matters most, and groundnut oil's high number is exactly why it's a classic Indian frying oil — it stays well clear of smoking at frying temperatures and crisps cleanly. (See Best Oil for Deep-Frying Indian Snacks.)

The rule that beats any number

Smoke point is a ceiling, not a target. Don't cook at the smoke point — and don't reuse frying oil repeatedly, which lowers its smoke point and degrades it each time (India's FSSAI RUCO programme is built around exactly this). Fresh oil at the right temperature beats a "high smoke point" oil abused.

Where Beej fits

Mt. Girnar Reserve Groundnut Oil is a high-oleic (75%+ MUFA) groundnut oil — single-origin from Junagadh, vagai wood-pressed and lab-tested batch by batch. That high-oleic profile means extra heat stability for your tadka and frying, while keeping the light, clean character of a well-made wood-pressed oil.
